Today is National Eat Your Vegetables Day! Since June is National Fresh Fruit and Vegetables Month, it only makes sense to celebrate these fine, healthy foods.
Enjoy vegetables as part of a meal or as a snack. For more information about nutritional content of various vegetables, check out this chart from the FDA. Just imagine! If you had a leaf lettuce salad with cauliflower, you’d have met your Vitamin A and Vitamin C recommendations for the day. Not to mention the other minerals that are contained in vegetables that help promote healthy skin and hair and can boost your immune system.
It is recommended by the USDA Dietary Guidelines for Americans, to consume 3 to 5 servings of vegetables per day. For most vegetables, one serving is 1/2 to 1 cup and can be eaten either raw or cooked.
