Seafood and Vegetable Stir-Fry
(from Diabetic Cooking)
Ingredients:
- 2 teaspoons olive oil
- ½ medium red or yellow bell pepper, cut into strips
- 10 snow peas, trimmed and cut diagonally into halves
- ½ medium onion, cut into wedges
- 1 clove garlic, minced
- 6 oz. cooked shrimp
- 2 Tablespoons stir-fry sauce
- 1 cup hot cooked rice
Instructions:
Heat oil in large nonstick skillet over medium-high heat. Add bell pepper, onion and snow peas; cook 4 minutes. Add garlic; cook 1 minute more or until vegetables are crisp-tender. Add shrimp and stir-fry sauce; stir-fry 1-2 minutes or until heated through. Serve over rice.
Serves 2. Serving Size: ½ recipe. Nutritional Info Per Serving: Calories 279; Calories from Fat 19%; Total Fat 6g; Saturated Fat 1g; Cholesterol 166mg; Sodium 724mg; Carbohydrate 33g; Dietary Fiber 2g; Protein 22g. Dietary Exchanges: 1 ½ starch, 2 vegetable, 2 lean meat.
Note: using peeled, de-veined shrimp makes this recipe very easy.
Dragon Dash 5K Run/Walk
1st Annual Dragon Dash 5k Run/Walk will be Saturday, May 11th at 9 AM. This race will benefit the Jessica Conner Scholarship Fund. Pre-registration has ended, so you’ll need to show that morning to register. Registration on Saturday begins at 7 AM and costs $25. The proceeds will go to a scholarship fund in memory of Jessica Conner, a fifth grade student who recently passed away. If you have questions, contact Nikki at 314-623-0262. Happy running!
2013 Better Body Challenge Winners!
There were 89 participants in this year’s challenge. It was fabulous.
- 1st Place Male: Ron Sutton. He lost 76 pounds: 22.04% of his total body weight.
- 1st place Female: Tracey Sawdy. She lost 48.2 pounds: 21.01% of her total body weight.
- 2nd place male: Randy Davis. He lost 22.6 pounds: 10.38% of his total body weight.
- 2nd place female: Wendi Turner. She lost 26 pounds: 13.42% of total body weight.
1st place winners each received a check for $445.00 and 2nd place winners each received a check for $130.00. In addition, they received a gift certificate from Off the Hook Restaurant & Randy received $25.00 gift card from Wal-Mart. Wendi received $25.00 gift card from Cato’s Fashion in De Soto.
Just imagine…the four winners lost a total of 172.8 pounds! That is roughly a whole person (depending on the size)! The total for the entire even was much higher, and it was all because people took sensible steps in their weight-loss program. This included making changes to their eating habits, engaging in daily exercise, and holding each other accountable. Congratulations to all the participants and to the winners.
