Farmers’ Market Opening!
It has been a long winter, but it is finally (hopefully) over. Let’s stick a nail in that coffin because the farmers’ market is back.
The vendors have been hard at work…as you can see. Now it’s time for the market to open!
The Grand Opening of the De Soto Farmers’ Market will be Saturday May 3, 2014 8:00 a.m.-12:00 noon. YES! I know it is ridiculously soon.

Music: 9:00-12:00 by ‘The Guys from the Senior Center (that is possibly the best named band we’ve ever had at the market)
Kid’s Corner: 9:00-11:00 organized by Jefferson County 4H Club. They’ll have a parachute lift and face painting.
Products available: Bedding Plants, Beef, Pork, Eggs, Cabbage, Lettuce, Bake Goods, Jams & Jellies, Honey, Artisans, Etc.

And just in case you’re concerned about this slightly cooler weather, it is forecast to be 54 degrees when the market opens and 70 degrees when it closes!
DeSoto Dash for Dystrophy Enters 6th Year!
6TH ANNUAL
DeSoto Dash for Dystrophy
5k Run-Walk/Fun Walk
Why: To raise money for the Muscular Dystrophy Association, helping to fund research and provide camps and services for people with Muscular Dystrophy. All profits from the event go to MDA.
When: Saturday, June 7th, 2014, 8:00 a.m. Runners/walkers check-in and registration will be 7:00-7:45 a.m.
Where: DeSoto High School Track, 815 Amvets Dr., DeSoto MO 63020. The course of the 5k Run-Walk will be located on the streets of DeSoto, while the fun walk will be on the track.
Cost: $20 postmarked by May 23rd, $23 after May 23rd. Donations are also accepted. Those who register by May 23rd are guaranteed a “DeSoto Dash” t-shirt in the size of their choice. You will be required to sign a waiver of liability/consent form.
Awards: Your age on June 7th, 2014, will determine what age group you qualify for. Medals will be awarded to the top two runners in each age group for each gender. The age groups are: 12 and under, 13-16, 17-20, 21-30, 31-40, 41-49, 50 and up. Trophies will be presented to the top overall male and female runner. Only participants of the 5k are eligible for medals and trophies. Random prize drawings will also be awarded.

Winter Flakes Came Out Again!
Get Healthy De Soto held its annual Winter Flakes 10k, 5k, and one mile run/walk this past weekend. The event was a huge success. While we did not have the occasional snowflake present, as we did last year, we did have plenty of “flakes” braving the cold to participate in our fun winter activity! We had over 180 participants in the run and walk combined. It was a great turnout and perfect weather for working up a winter sweat. Our overall male winners this year were Jon Yoch, in the 10k, with a time of 36:58, and Joseph Jordan, in the 5k, with a time of 18:56. Our overall female winners were Izzie Isaacson, in the 10k, with a time of 47:16, and Emma Wright, in the 5k, with a time of 22:19. And you can see the rest of the race results at GHD RaceResults 2014. We are proud of all of our participants, volunteers, and sponsors (sponsors are listed on the donor page of our website) for the event, and thank all of them for their support. And special thanks to Trish Coleman and Annie O’Shea for organizing the event. You did a superb job!
Couscous with Grilled Vegetables
from Everyday Light Meals
Ingredients:
- 2 small zucchini, quartered lengthwise
- ½ medium eggplant, sliced widthwise
- ½ inch thick 1 medium sweet red pepper, quartered
- 1 small onion, sliced ½ inch thick
- ¾ teaspoon salt, divided
- ½ teaspoon pepper, divided
- 2 cups reduced-sodium chicken or vegetable broth
- 1 package (10 oz.) couscous
- ½ cup chopped green onion
- 4 ½ teaspoons lemon juice
- 2 teaspoons minced fresh thyme or ½ teaspoon dried thyme
Spritz vegetables with nonstick cooking spray; sprinkle with ¼ teaspoon salt and ¼ teaspoon pepper. Coat grill rack with nonstick cooking spray before preparing the grill for indirect heat. Arrange vegetables on grill over the side for indirect heat. Grill, covered, over medium indirect heat for 4-5 minutes on each side or until tender. Let stand until cool enough to handle. In a saucepan, bring broth to a boil. Stir in couscous. Remove from the heat; cover and let stand for 5 minutes or until liquid is absorbed. Cut grilled vegetables into ½ inch pieces. Fluff couscous with a fork. Add vegetables, green onions, lemon juice, thyme and remaining salt and pepper; toss until combined.
